Pig’s Feet

Pig’s feet, also known as pig trotters, are a versatile, often-overlooked piece of pork that brings a punch of flavor to every dish they’re a part of. Pig’s feet are a key ingredient in many sauces, stews and gravy, both adding flavor and thickening the liquid thanks to the immense of amount of gelatinous collagen they contain. Pig’s feet are also excellent braised and pickled.
