Fresh Pork Jowl

Pork jowl comes from the cheek of the pig. It starts out as a tough cut, but prepared the proper way, it can transform into a tender, flavorful treat. The jowl contains rich marbling, making it excellent to cure like bacon, as flavor in soups and stews, in dishes such as black-eyed peas, Brussels sprouts and collard greens, or simply braised, seared, grilled or slow-cooked.
